Dry Beef Tapioca

Ingredients

  • 3 tablespoons of olive oil
  • 2 thinly sliced onions
  • 1 tablespoon of chopped garlic
  • 1 chopped yellow pepper
  • 1 cube of vegetable broth
  • 4 chopped seedless tomatoes
  • 4 teacups of desalted, cooked and shredded meat
  • Salt and black pepper to taste
  • 1/2 cup of chopped green onion
  • 1 teacup of cream cheese
  • 2 cups of tapioca made with manioc starch

Directions

In a pan, on medium heat, heat the oil and sauté the onion and garlic. Add the pepper, the vegetable broth and the tomato and fry until softened. Add the shredded meat and mix well. Season with salt and pepper to taste, turn off the heat, add the spring onion and set aside. For the tapioca, place a dry non-stick frying pan on low heat until slightly heated and spread a portion of the reserved mixture until it covers the bottom of the pan. Wait until the dough is firm and turn with a spatula. Put a portion of the filling in half of the dough along with a portion of the cream cheese and fold in half. Repeat until there is no more dough and filling. Transfer to a platter and serve.
